I made some really good low carb bulgogi tacos for dinner tonight. They were a hit with everyone so I thought I’d share. You can make them regular by using regular brown sugar and regular tortillas.
Ingredients
- Marinade
- 1/3 cup Soy Sauce or Coconut Aminos
- 3 tbsp. Brown Sugar Swerve or equivalent
- 1 tbsp. Sesame oil
- 3 cloves garlic, minced
- 1 Tablespoon Ginger, minced
- Avocado or light olive oil
- Taco Sauce
- 1/3 cup sour cream
- 1/4 cup mayonnaise
- 1 tsp. garlic powder
- 1 tbsp. Sriracha
- 1 Tbsp. Lime juice
- 1-1/2 lbs. flank steak, thinly sliced across the grain
- 1/4 purple cabbage, grated
- Green onion, sliced
- 1 tbsp. Sesame oil
- Low carb tortillas
- Lime slices for serving
Instructions
- Combine marinade ingredients. Add thinly sliced beef and toss to coat. Let marinate 1-3 hours.
- Prepare taco sauce by combining above ingredients.
- Heat oil in skillet over medium high heat. Add beef to hot pan, cooking in batches to not over crowd. Brown on one side, turn and brown second side, them remove from pan and keep covered and warm until all beef has been cooked through. Add marinade to pan and heat through, then add beef back to pan and toss to coat. Drizzle with tbsp. sesame oil and toss again.
- Serve on tortillas with grated cabbage, sliced green onions, and drizzled with taco sauce.
